Hello Germaux! We have a lot of pastry people here, and we're happy to greet a candy maker and (I think) chocolatier. The Professional Pastry forum is a great place to hang out, but don't overlook the general forums, archives, photo galleries, etc. I recently made my first-ever batch of soft caramels (recipe in the CIA home baking cookbook) and wasn't impressed. Maybe you can enlighten me and others sometime with a post in either the professional pastry forum or the general baking forum. (If you post it here in the Welcome forum, most people will miss it.)
