I've been on an ice cream making kick lately and really love chunks of chocolate in my ice cream.  Chips once frozen are far too hard.  You could almost chip a tooth.  Ben & Jerry's Chunky Monkey has huge pieces of chocolate which are soft enough to easily chew.  I've read that chips have less cocoa butter to maintain their shape when heated.  Is that why they are so hard when frozen?


Is there are particular chocolate I need to buy or is there something I need to add to chocolate to make it work well when frozen?
