Dehydrated Foods? Veggies? Fruit? Jerky?

I've become interested in dehydrating foods. I had to pick up a food dehydrator for a recent job and am now trying to find some fun things to do with it.

A friend brought me some dried okra the other day that was really quite tasty-like eating okra flavored potato chips.

 

I've been trying to make those nice dried strawberries with this thing but haven't had any success yet. They're just kind of rubbery and dark.

 

What about the safety of making jerky? Anyone experienced with that?

I got high end food dehydrator last summer.  Aside from herbs and tomatoes I haven't had much luck.  I did make a batch of dried, salted snow peas that were kind of fun, to a point.

 

The best leather I've made was a beet and pinot noir.  Taste was great but that texture is just not something that rings my bell.

 

I'm a BBQ cook and on a lark I made a leather out of my sweet style sauce.  Kind of freaked out my staff, that one did.

 

One of the things ( and this is just me)  that keeps me from playing with it more is the tone of the fan.  After an hour I start getting a pulsing headache.  My ice cream maker does the same thing (breaking the Mrs' heart, that one).

Dry your own herbs. I often find a bunch of herb is more than what's required in a recipe. Instead of always having to figure out how to use the rest, I just dry them. 

 

Dried apple, pear, pineapple slices are good snacks.
