hoods in commercial kitchens

i am venturing into opening a coffee house...but i would like to bake my own bread...do i need a hood to have an oven...and i would also like to have some stocpot stands...do i need hoods for those as well?

As Pete says "check your local laws"  One of the most expensive items in a commercial kithen is hoods and Ansul Suppressant Fire System, which by the way you may also require
