Help.... My cupcakes suck.

I think I overmixed Becasue my cupcakes sunk in the middle and the inside is a tad too gooey. Can i fix the Batter instead of starting over? I used a Box of white cake mix (Betty crocker) and added fresh strawBerries.

I am thinking too much moisture, the juice from the strawberries. When you cut them did you absorb some of the moisture with a paper towel ?

 

Usually when they sink there is not much you can do about it. I would put them back in the oven for 5-8 minutes , let them cook through and use the cupcakes for a layered dessert.

Break up the cupcakes and use the cupcake layered with cream in a bowl. Looking like a trifle but without the custard. At this point you can add the strawberries with the moisture in the layers. This is one suggestion, maybe there are others. ...just a thought,  Petals.

How much did they fall? Can you cover it up with an extra dollop of icing?

 

When I make cupcakes with berries (in this case strawberries), I usually just blitz them up, add them to the batter, and depending on how liquidy the berries are, subtract some of the other liquids (usually the milk). Then I usually place fresh slices on top of the icing. I know this doesn't really help you right now, but it might be something to try in the future.
