I'm new to the site and am enjoying reading everything while I have internet connection, which isn't often as I live on a boat and
move about.
I haven't found a specific answer to my question - which is: how long can I keep home canned meats in a hot climate?
Because of my choice of life I am home canning my meats, but am always nervous about keeping them.
Every source I have found says the jars should be kept in a cool place, and that is precisely what I do not have.
The boat is normally in the tropics with tropical temperatures.
As it is also a catamaran it does not have the deeper bilge areas associated with monohulls and and used as good storage spaces.
Does anyone have any experience keeping any kind of home canned food in a hot climate?
