Hi what is a good chef knife to learn beginner skills on? thank you

A little more information might be helpful.  Generic answer is anything you can sharpen.  With what you have said though, I would suggest something that you wouldn't mind scratching as you learn to sharpen it...Forschner comes to mind.  Chef's knife (gyuto) would be a logical place...that and maybe a paring knife...depends what you plan to do/cut, etc...

Practice the basics quartering and mincing vegetables.

Budget and how you plan to sharpen it. Might need some extra budget for sharpening. Preferred length? Most here would recommend a 10" over an 8".

 

Forschner rules the bang for buck roost. Good knife, sharpens well.
