I enjoy pairing fresh firm white fish with mint herb, raisins and capers ...


Here is a recipe I prepare at home while fondly thinking Calabria, the toe of the boot  ...


4 Servings.


2 tblps extra virgin olive oil

2 tblsps chopped fresh mint herb

1 1/4 tsp fresh minced garlic

1 jar of Sicilian capers

4 pieces of fresh sea bass or other fresh fish where you reside

3 tblsp lemon juice

 3 tblsp minced fresh parsley

1/8 cup raisins


Whsik the olive oil, mint herb, garlic, capers ( I wash the brine off ), lemon juice and parsley in a medium bowl and stir in raisins and let stand 20 minutes


Prepare broiler or sauté pan and brush fish with olive oil and sauté about 3 mins. per side.

Drizzle lemon juice over fish and spoon caper salad over ...


Foccacia and a Prosecco are lovely company.
