I've been preparing for Culinary school through books from the library, mostly chef's biographies and books about the business of keeping a restaurant up and running, but i'm looking for stuff more similar to what i'll be learning in culinary school, not just general information. if anyone can offer me the names of any good books or documentaries, i'd be grateful!

The best resource for pre-culinary school education is to actually intern or help out in a real professional kitchen. Some restaurants would be happy to have you come and help out a few days a week. You can practice on your own and/or read books and watch documentaries the rest of the week.
