Knives...

So this evening I was sharpening my knives on my stone in preparation for the weekend and I got to thinking, how did you learn to sharpen your knives? To get that razor's edge consistently down the blade? Was it a matter of practice makes perfect? A great teacher? Or was there a book, or article that spawned some great epiphany?

I'd love to hear...

Youtube videos posted by murray carter(and others) to get my foundation/understanding of the techniques then just a lot of practice. I would(and still do) go to work early to put an edge on tbe house knives. Coworkers are always throwing knives at me to fix-up now and I like being the guy they come to.

While this doesn't apply to Murray Carter I'd be cautious of the uboob videos. Not a great way to learn because so many sharpeners have really poor habits. I'd suggest grabbing a copy of Dave Martell's sharpening DVD or if your really into Japanese knives the DVD from Korin. Korin used to do a 15% off sale a few times a year on knives and from time to time they would include that video for free.

Knife sharpening videos on youtube are just like any other instructional videos on youtube: there are a few great/informative ones and a lot of crap. The videos posted by Murray Carter alone are enough to get someone with no prior sharpening knowledge up and running. In addition there are great videos from japanese knife imports, chef knives to go and a few others. Beyond that there are plenty of great knife sharpening resources revealed by a quick google search. I see no reason why anyone should ever need to pay for a tutorial. I'm sure the DVD's you suggested are fine but you can find the same information for free elsewhere.

With one very large Caveat, the person just learning to sharpen has to be able to discern good technique from the not so good. Sorting through the *rap (as you put it) can be a challenge for some one starting out.

I'm not suggesting any one "needs" to buy a DVD but if you want a step by step process without sorting through a spattering of sales clips, picking up bits and pieces it's the best option I could suggest short of taking a class.

Learning first hand beats the schneikies out of watching video on line or DVD.

I do agree the Murray Carter clips are worth watching. In either event I found the DVD's mentioned to be a sound investment, however I did get the Korin DVD for free (I wouldn't pay for that one).
