Perfect tutorial, man..that "gravlax" method of curing is really nice and effective for any meat and fish also...

thanks, guys - if you have any questions while you're trying this, please let me know.

 

for best results, try to keep your cuts of meat (roasts) to three inches or less in thickness for curing. if they are thicker, you may want to also inject the roast with cure.
