I was looking back at some of the older threads on Chef Talk in the Pro-forums, and this one struck me

http://www.cheftalk.com/t/68578/making-a-school-lunch-program-healthy

I know that there are plenty of home economic masters in Chef Talk that could come up with a great school lunch plan  for three dollars or even less for both breakfast and lunch, we do it everyday...

I challenge you non-professionals as well as Pro-Chefs to do it...

When I Googled top healthy ingredients under $1.00 I found :

Oats

Eggs

Kale

Potatoes

Apples

Nuts

Bananas

Garbanzo beans

Broccoli

Watermelon

Wild Rice

Beets

Butternut Squash

Whole Grain Pasta

Tofu

Low fat Milk

Pumpkin Seeds

That's just an example of what I found online as far as inexpensive, nutritious foods.

I'm thinking that we here at Chef Talk could come up with a breakfast as well as

lunch menu for $3.00 per school kid.  Where I went to school, we were feed a hot

lunch every day.  Looking back in my mind's eye, I would say that they served us kids

pretty wholesome foods.  And I think that it was from scratch, other than some

canned veg when they had to.
