Food Trends for 2012

i just read that one of the TOP food trends for 2012 is the japanese puffer fish......as in the really, really, really poisonous puffer fish?  first it was escolar (the ex lax fish), now this...hmmm.....can you say sayonara baby?

my question is....who is responsible for these trends?

Where did you see this trend pop up?

To me, puffer fish is a REALLY bad idea to set as a "trend." I don't of know any variety of PF that aren't poisonous. They need to be handled by mature, trained chefs who know what they are doing. Puffer Fish have a poison gland that needs to be CAREFULLY removed, in tact, no spills allowed. If it were to break before removed from the carcass or on your station you would have throw out the baby and the bath water, and depending of the experience and opinion of your supervisor(s) you might just throw out anything it touched that you wouldn't mind soaking in bleach for about a week or so.

As for Treds, they are generated mostly through The Food Media Industry, Mags, TV, Blogs big and small, etc. Most of the trends just come from what's "New", popular or "In Season" I'm sure they take alot of advice from chefs to avoid looking like The Weatherman.
