Peking Duck

 

It is one of those things that is just too complicated to get right at home and should be bought prepped from Chinatown, if not served in a restaurant.  My husband still laughs about the times I followed the Frugal Gourmet procedure of sewing skin shut, pumping up with air, drying in front of a fan, hung off the back of a chair.  Some things are just better done in a place set up for such and done well, all the time. 

 

Salumeria meats are something else that comes to mind.
