my "Frankenstein" meatloaf?!?

Made this last night.  My freezer is full to being avalanche-prone.  Had a few things in fridge that I HAD to use-or-lose... some deli smoked turkey breast and some corned beef.  Gave that a few spins in food processor and added to ground beef.  Had some home-made, croutons that I soaked in a little milk.  Then all the usual suspects for a meatloaf... egg, etc.  Didn't add any salt... figured the smoked turkey and corned beef would take care of that.  It came our pretty darn tasty for dinner last night.  Will get picked at today and will make sandwiches for lunch.  And if I still have some around after a few days, it'll get vac sealed and fill in the small space in freezer left behind by the ground beef.

 

What atypical ingredients have you put in a meatloaf?

I make a recipe similar to the Cracker Barrel Restaurant
but I wrap it all in applewood smoked thick cut bacon

and place it on a 1/4 sheet pan to bake off     licklips.gif

Wow that sounds tasty. I can't really give you a good answer but I rarely make meatloaf. In fact I can't remember that last time I did but your post makes me think I will try it.
