Any suggestions on how to hold roasted cornish hen halves. The hostess would like dinner served at 7pm but recently told me she might want dinner served at 8pm.- depending on how many guests have arrived by 7pm. How do I hold the hens (without sauce) if dinner is served at 8pm.

suggest you pull the hens 10 minutes early with foil to retard the browning and finish them when the guests get the first course. The other is to cook the hens at a lower temp to retain the moisture and again finish them as guests arrive.
