Dessert Microcresses?

Thread Starter

We've all seen microcress on savoury dishes with common favourites like peashoots etc, but does anybody know of any that are sweet and readily available to compliment to a dessert?

thanks

I know one of my accounts uses micro mint sprigs to garnish some of the desserts they buy from us; I think there are several varieties of micro greens you could get from a wholesaler; you could also use candied flowers or rose petals - but candied flowers are expensive to buy and time-consuming to make and store.

I use chocolate mint.

Looks like mint leaves, but when you bite the leaf , its a cross between chocolate and mint. Great for plating.

On another note (for those who may not realize) , there are many plants that pair nicely in a dessert.

Lavender, lemon verbena, lemon grass...Kaffir

Lemon/basil cake

Lemon/rosemary

Basil ice cream

Terragon ice cream

sage sorbet with peaches.....

Basil & pineapple

Sage & pear

Rosemary & apricot sorbet.
