I use chocolate mint.
Looks like mint leaves, but when you bite the leaf , its a cross between chocolate and mint. Great for plating.
On another note (for those who may not realize) , there are many plants that pair nicely in a dessert.
Lavender, lemon verbena, lemon grass...Kaffir
Lemon/basil cake
Lemon/rosemary
Basil ice cream
Terragon ice cream
sage sorbet with peaches.....
Basil & pineapple
Sage & pear
Rosemary & apricot sorbet.
