Have been asked and approached by an owner from a restaurant that wants to use some original recipes on their menu, seems to be a new trend, they are willing to marquee the originating chef (E.g. "Featuring Chef Joe's Moose Tacos" etc.) but how does on charge for that?
There has been discussion during training their staff to properly prepare the "Signature Dishes", @ Private chef / per diem rates also we would have legal docs etc., to formalize the arrangement.
What do all my CT brethren feel is fair for ALL parties?
