homemade fortune cookies

I tried to bake a batch of fortune cookies for upcoming bridal shower favors.  It was brown at edges but still white the rest.  How do you get them even brown not burnt like restaurant cookies?  I baked them at 375 degrees for 5 minutes as instructed.  Recipe: 2 egg whites, 1/2 tsp almond extract, 1/2 cup of flour and sugar. 

If i were to make chocolate version, do I add some cocoa powder?  I plan to dipped them in candy melts and pink sugar pearls for theme colors.

Any tips?  If anyone has made them, can I used silicone mats rather than cookie sheets with cooking spray?

What you are making is actually what is called a Tuille.

Your discription sounds like they need just a few more moments in the oven. This should take care of the problem.

Recipes are merely guidelines and your oven, and technique can vary the outcome.

 

You pretty much have to stay at the oven and watch them as the bake, so you can take them, rest them, and fold them the way you want.

 

Yes cocoa powder will work to make the chocolate ones. You may need to increase the sugar for those.

Silpat or silicone will work beautifully.  Try them again.
