Palestinian Chicken?

Did anyone see the episode on HBO series' "Curb Your Enthusiasm" called "Palestinian Chicken?"

 

Larry David and his friend discover this small restaurant that makes great roasted chicken, discover it's a rather discreet place for their friends to hide "indiscretions"  and lots of hilarity ensues.

 

The chicken scenes make me really hungry.

Just wonder if anyone might know how a person would make good "Palestinian" roast chicken? I want some!

RUb it in Zaatar would be my first step. Probably include some garlic extra sumac.
