Challenge: How would you Pair Fruit juices with Foods?

Lets say that the customer can not tolerate Alcohol, Wines, or Near bear at all. Basically, anything that is a "non-alcoholic" substitute for alcohol is banned.

 

What would you use to substitute for common wines with their common food pairings?

What would you use in place of a Chardonnay? Red Wine? White Wine?

I've been pondering this for a long time. I've been thinking that toning down White Grape juice with a hint of Pineapple or Pear with Apple Cider and Strawberry Juice might work with a Fish entree.

 

For Spaghetti, I was thinking of a Red Grape Juice mixed with Raspberry Juice and Apricot Juice. drinkbeer.gif

They won't be any where near dry enough. Better to use water accented lightly with citrus, sparkling water and so on. The unsweetened citrus sparkling waters are often quite nice, Calistoga brand lemon for instance. Avoid the artificially sweetened ones as well.

Angostura bitters are a fun tilt to many such waters or fruit juices, but it's an alcohol base I think.

If you want to stick with fruit juices, how about mixing them with tea such as for seafood mix the white grape juice with sencha or the spaghetti mix the red grape juice with darjeeling.

Combining fruit juices and nice teas could be a way to go.

Make some unusual aguas frescas.

I forgot about Sparkling water. I would add just enough of the juice so that it doesn't taste like flavoured water.

Teas mixed with Juices sounds like a lovely idea. Tea is supposed to be healthier for us too.

Good Evening,

 

I would sub Sparkling Waters with a fresh slice of Lime or Lemon for wines ...

 

I believe it also would have something to do with the cuisine profile ... For example, Sparkling Italian Waters are lovely with Pastas and Salads ... and other Mediterranean dishes, for instance: Portuguese, French, Greek and Spanish.
