I saw a Chopped episode a year or so ago where the chef cooked a slice of bread and a cut of skate or hangar steak with it and cooked it on the griddle.
I believe the piece of bread was actually on the griddle and then the steak was on top. My coworker brought up the fact that maybe it would not cook properly because the steak would not have direct heat.
Can anyone give me any advice? Can this be done?
