I do a lot of gluten-free baking, which means my large coffee cakes tend to get a little crumbly when cut into squares (I'm not a fan of xanthan gum). I had the idea to bake individual squares of coffee cake in a square muffin pan, but all the pans I've found seem to be smaller in size, intended to be used for brownies or small muffins (couldn't find them any bigger than Daddios 2 5/8 inches wide and 1 3/4 inches deep).
Anyone know where I can find a jumbo size square muffin pan? Or have any suggestions? I thought about using square ramekins, but I don't know if I want to go to the trouble.
