Fruit caviar.... I want to make it

This topic has probably been discussed b4,  but I am too lazy to research..  smile.gif  ...

 

Do I really need Sodium Alginate and Calcium chloride to make this fruit caviar ?

 

I saw a video using both and also another just using Calcium chloride.

 

Where can I buy these chemicals ?  I do not want to buy a big bag.  I just want a small amount,  for now.

 

I tried asking a pharmacy and they look at me like I am crazy and told me that only hospitals use them.. Please give me your inputs, suggestions,  advice etc....

Is there a restaurant by you that does molecular gastronomy? If there is, just go in and ask if you can have some. If they say NO, then ask if you can pay for some or where to get it.

you can buy rather small quantities of calcium and alginate from a place like http://www.willpowder.net/

 

 

Be aware that due to acidity if you try to spherify citrus you will need to use a differnt method of spherification, most likely cold oil spherification using agar.

Thank you very much for your suggestions.. I am very clueless at this...  No there is no restaurant that does thsi type of process.  And I do not know what "method of spherification" is.. Is that when you drop the fruit juice into the solution ?
