VIESTE, PUGLIA BLACK OLIVE TAPENADE

 

250 Grams Black Kalamata Olives or Similar ( for slicing and de-pitting )

3 Jarred Anchovy Filets packed in Evoo

2 tblsps. Capers rinsed well

Fresh lemon juice from 1/2 lemon

A sprinkle of fresh black peppercorns

A sprinkle of a half of red dry chili pepper or flakes

125 Ml. Evoo

2 cloves garlic minced

 

1. slice the olives, and remove pits

2. place all ingredients except the Evoo in a Food Processor or use an electric Mixer

3. Add the seasoning to taste

4. Pour very gradually the Evoo and continue mixing so to combine all flavors

5. Chill for 1 hour to blend flavors prior to serving

 

*** Serve with a glass of wine, grossini breadsticks or focaccia homemade ...
