Foodie Challenge

Hello, everyone!

 

My name is Lilah and I literally just joined this site a few minutes ago. I'm so excited to have found it (hooray for Pinterest!). I love cooking and finding new recipes to try; one of the things I get a lot of pride from is cooking for my husband. Reason? He has Phenylketonuria (say it with me: fennel-ket-oh-nuria), which is also known as PKU. He can only have 4.5 grams of protein per day. If he goes over, he has mood swings, irritability, trouble focusing and lack of patience because the phenylalanine (fennel-ale-uh-neen) builds up in his system and is toxic to his beautiful brain. Needless to say, it's a challenge having foods he enjoys that don't cost an arm and a leg to purchase from specialty food stores. I have a few recipes he enjoys, such as low-protein spaghetti with a spicy tomato sauce; macaroni salad; vegetable soup (the thick, yummy kind that warms your soul when you eat it); and a very cantankerous cookie recipe. I'd like to know if anyone has ideas of low-to-no-protein recipes that aren't the typical soup, salad or veggie burger. Thanks for any help, and good luck with this challenge!

You can start with avoiding gluten.  You don't have to go with gluten free, but you could do Vietnamese food with rice noodles or other kinds of noodle soups.  For example, Vietnamese rice noodle "salad."  The dressing is made with sugar, water, lime juice, fish sauce, and red pepper flakes, and garlic.  Serve with 2oz of stir fried beef and a ton of veggies.
