The prairie cook

I live in the plains of Montana and once a year I cook for 30 people for the Custer Battle Reenactment. I am looking for recipes that can be done in a less than ideal conditions. My BEL consist of a BBQ grill, 4 foot propane grill and various camp stoves. We dry camp for 5 days and no electricity  except for generators. Every morning I cook up Bacon, Eggs, hash brown, pancakes and the perk coffee.

These people are the meat and potatoes type of people and I tried to twist up dinner a couple of times and I got some very strange looks when I put out a garden fresh salad with a fresh vinaigrette dressing. I am looking for recipes I could do for the meat and potatoes crowd.

I do not know what your budget is like but for one I would do some beef stew and a biscuit/ buffalo burgers/buffalo steaks/ beans there favorite way,Elk steaks, some pemmican and of course biscuits and gravy! Get dry ice and keep your meals refer part portioned out in ice chests! Not easy money but darn good eats. Good Luck, Doug.............

Thanks Doug for the reply.

I do the biscuits and grave and everyone loves them. Last year I did moose stew, about 10 gallons and they were scrapping the pot.

They love the cooking but I was looking for a little more flair. Maybe some burger recipes that would knock there socks off. I do have to watch how everything is prepared because all the food is stored in Ice chest.
I made a rub for the elk steaks and the only thing they were mad about is there was only one to a customer. Next year I want to go in loaded with recipes and do a meal plan that is more  to what they really like. Some of the guys have never ate moose and boy were they surprised. Good Eats.

Is there a burger recipe out there that is just to die for? I will start with that one and do a test and build on more. I would love to do a roast beef dinner with all of the trimmings but need to find a oven that can be packed.
