Need to make at least 2 gallons of ganache HELP PLEASE!!!

Hi doing a fundraiser and will need ganache by the gallon sorta say. How would I make a large amount of ganache. The recipe I have only makes 3 cups which is a long ways from 2 gallons.  Any recipes for large amounts also since this will be stored in a plastic bucket container until time to use (dipping cheesecake on a stick) do you think the ganache will set and start getting kind of stiff like for frosting if it sets tooooo long. We will be outside any tips greatly appreciated. Thanks

Any ganache recipe can be increased to whatever amount you need.  If you want a more liquid ganache just make with one part chocolate to one part cream ratio.  That will generally be good for glazing cakes.  But, it will set up.  You would still need to melt it back down if you are going to dip anything in it and keep it warm enough to stay liquid.

4qt. heavy cream, 8lbs. chocolate.

Your recipe is for 3 c. You need 2 gallons, which is 32 c. 32/3= 10 2/3. Multiply your recipe by that amount. Let the ganache sit at the temp you'll be holding it at and check it. If the consistency is wrong, add more cream or chocolate to make it thinner or thicker. You can remelt ganache all you want as long as you're gentle with it.
