sugar pie?, honey pie?, shoo fly pie?.....how do you pie?

What a coinkydink!  I was just pulling everything out to make PIE !!!

Santa brought me mini pie pans

we all like different kinds of pie at our house

lemon meringue, cherry, blueberry, rhubarb, apple ... chicken, turkey pot pies ...

so rather than make four pies and only two slices of each get eaten,

I now make personalized pies (that's not OCD is it?)

this weekend I'm making cherry (for me) and lemon meringue (for Mister k~girl)

... but I'm cheating!

I have meringue powder leftover from Christmas cookies

and I found canned lemon filling (never saw that before)

I've also never tried making the topping from powder before

keep your fingers crossed for me ...

We make all the midwestern desert standards: apple, cherry, pumpkin, pecan, and rhubarb.  Also make lilikoi (passion fruit), haupia/chocolate, and coconut from time to time.  Later this summer I will be up in Canada and have access to huckleberries, blackberries and raspberries in volume, so we will have those as well.  I make a fresh raspberry pie bound together with a fresh currant jelly I make from currants I can pick up there as well.  Just have to get to these before the bears.  I also make a pie with a baked meringue shell that is then filled with passion fruit curd and then topped with whipped creme.  A popular summer pie.

I much prefer pie to cake.

I like savoury pies.  Spanakopita is a favorite. Zuchinni pie, leak pie, and meat pies are great too.  I don't like fruit pies like cherry or blueberry.  My favorite sweet pie is pumpkin.

I have acquired OCD by association ... HA!  what tipped you off on Michael being spoiled? HMMM...

well, I do not like waste, so I made the full sized Lemon Meringue pie, even though that is not my favorite. 

I was pleased with the canned lemon filling, but not the powdered meringue. 

It came out too "crisp" is the way I can think of to describe it, rather than soft and pillowy. 

I think that product would be super for a pavlova, easy-peasy...

(agreed on the tomato product, especially if it's from Italy) 

And that is an excellent question about Boston Cream Pie!

Update :

Tonight we had another piece of PIE!!

That Meringue was much better, not crunchy, even Mister K~girl noticed that.

Maybe I should reconsider the use of the powder in the future, just be sure to give it time to mellow.

I have my Dad’s Mother’s recipe for double crust Coconut PIE!! that I have been just itchin’ to make, but who to share it with?  I suppose to I could “Google” to try to reduce the recipe down to two mini PIEs!! like I said, I don’t like waste and a full sized PIE!! would only get half eaten, the other half would just sit and get nasty…

I saw an article from America's Test Kitchen that Vodka of all things makes the best pie crust.

I have never used vodka.

I usually put flour, salt, lard, egg and cold water.

… so we had ANOTHER piece of PIE after lunch today and ya’ know…

That buggar still has not wept a lick! 

Normally, when I make meringues with fresh eye whites,

they start to weep all over and make the crust all soggy and YUK! 

These powdered eye whites are nice, even O.H. made a comment… and he says he’s not a foodie …

Man I haven't made  a cream pie in ages.  Dammit, cream pie tonight haha!

While Mister K~girl and I were in town food shopping yesterday, I saw something I hadn’t seen in YEARS! 

DreamWhip, remember that? 

My Dad’s Mother, who was from the Azores, would make this Cherry Cheese Pie with DreamWhip. 

So I was looking through her recipe binder that I inherited, but it’s not there…

Can anyone help me out here??

Yup, Mister K~girl helped me make a Chocolate Dream® Pie

He even had this great idea to “decorate” the top with chocolate rocks (candy)

AND to add instant coffee to the pudding mix for more flavor…HUH?!!  Where’d that come from?

It was dang good!! 

I'll use that pie topping on a cake bake it in a bread pan and call it "rocky road"... Ha!
 

I know, right?  Isn't that a fun idea, and my husband keeps saying that he doesn't know anything about food...
