this was relatively easy and can be done by just about anyone. it's certainly worth giving a try, and i am sure if you do that you will like it.

My last batch, I need to make more when it gets cooler. I didn't trim much, just butterflied the bone out.

High Mountain Seasoning makes a buckboard bacon cure that I use. Good stuff! I would fry up the bacon, onto toast with mayo, tomato, lettuce. The best BLT on earth.
