I need some Unique Pastry Ideas

I am working at a small bakery and we are expanding into wholesale accounts. One that we want in particular keeps asking us for a unique pastry, something customers can only get at this spot. I have a few ideas but was wondering what else is out there.

 

Does anyone have any good ideas for a pastry ideas that are unique? Can be anything from laminated pastries to muffins to yeast-leavened pastries. Use your imagination.

The most memorable "unique" pastry I've gotten at a bakery was a coconut pineapple danish, done in a square shape.  It was anything pretty to look at but it was tasty. 

 

Smoked cheddar and tomato croissant?

 

Mini Coffee Cake featuring a local fruit or berry?

I think you're better off going to the bookstore or library and looking through Professional baking and pastry books, and magazines.

Are you looking for something fabulous like those in a French or Parisian fancy bakery ?  those are the ones I would consider unique.  Or maybe you are looking for something different and unusual flavors ?
