Still waiting for that perfect job, the job that will help me combine all the skills I have acquired these last 20 years. This profession is difficult and worry some. Always finding better oppurtunities, but after a while you just stop smiling when you go to work. It's beginning once again for me. Maybe it's time to back myself in my own endeavour.

My best advice I can give you is to go do a stage with a well known chef in the area. I work at an Inn on a big lake that is just crazy in the summer (Three weddings and a anniversary dinner this past Saturday plus 250 covers in the dining room) but have already setup a stage in the offseason with a Chef who is doing all there own cured meats and has 1400 lbs minimum hanging on any given day just because I want to learn more about it. I find the thing that keeps me going is doing fresh things. Next party you have booked make your own chorizo or cheese teach yourself something new, perfect something you've been working on or do something you enjoy that you haven't had a chance to do in awhile. Just some thoughts for you.
