Quiting a nice a job to cook - Advice

Hey

im a 26 year old who has been in the cooking biz for 10 + plus year did dish for 2 of those years,

 

i have since gone to school for something non cooking related and have a pretty easy office job in that field.

 

but cooking has always been close to me, i moonlight as a sous in a small 100 seat place in town, on avg i work 80 plus hours a week.

 

my question is should i stick it out at the office job which im not a huge fan of or go cook for my days.

 

i know the short term choice is too cook as it way better but over the years all the chefs i have ever known are burnout and crappy old man

Old is a point of perspective originating from the eyes of the beholder. Tired of cooking, never. The crappy part......

it is the only thing i really look forward to in a day.

Unknown, I am not the best one to give advice, besides a wise man doesn't need it and a foolish man won't take it. I just know that my tombstone won't say "shoulda, woulda, coulda".

Imagine you're at a funeral. You see everyone you know there. Upon looking into the casket, you realize you're looking at yourself. You sit down and wait for the speakers to give their speech about you. There are things they will say that portray who you are. What would you want them to say about you? The things you have done? The goals you have accomplished? What you were passionate about? Where you seen yourself ending up in life? 

 

The answer is the definition of your own success. Do you want to be known for being a cook? More so, the goals you create while being one? Think long and hard about these answers, because I assure they won't be ''make millions and drive a nice car'' like your conscience mind would like to think. The answers will be the things that matter to you. Weird analogy, but hopefully this gets you thinking and you find that answer. 

 

Everyone here can only give you advice, but nobody here will know for sure if you'll be a crippled old man, or a master chef someday with a passion for food still more powerful at the age of 100 than at 26. Just do what you're happy doing while being able to pay the bills and save for the future.

OLD??? I am 70 and I still cook. Can't move like I used to , Forget things sometime.  In fact enjoy it more now then ever. As far as laying in casket and wondering what people say? As long as in my heart, I know that I have tried my best and given my all, I really don't care what they say.

I quit college one semester away from graduating so that i could emerse myself in this career.    You know what i'm never hungry, never thirsty and dont have any regrets.
