I need to keep skillet fried fish warm. Any ideas?

Need more info. Why? How long? Crusted and or battered? Etc.

I put a bakery cooling grid over a sheet pan and place in a really slow oven (170 F).

Works for me.

 If you're inside, do this^

 

 If you're outside, then get a cheap styrofoam cooler, fill ballons with hot water. Tie them up and place them in the bottom. Take a warm sheet pan (NOT HOT) and place it gently over the ballons, at the bottom of cooler.

 

Now place the foiled wrapped fish unto the sheet pan and place the styrofoam cover on top of container.

 

* The sheet pan should not be able to have much contact with the balloons. Avoid the smashing effect!

Good for 2 - 3 hours with cover not removed...

HotChop..that is ingenious!

The sheet pan should be a bit larger so it will "stick" and not go any lower than 1-2 inches above the balloons, right?

I would still suggest the grid, tho.

Keeps the fish from sitting in the drained grease.
