Hi Folks- Need to get a bread knife. I'm looking at the Tojiro ITK and the Victorinox Fibrox. I like the Tojiro ITK because it looks like the scalloped "serrations" would work better, and be better able to be sharpened down the road. And I like the handle better. But, I'm a lefty. It looks like the ITK has a much deeper bevel on one side than the other, whereas the Victorinox looks more symmetrical. Does the ITK steer funny for a lefty because the edge is more asymmetrical than the Forschner?

FWIW, the Fujiwara petty I've got supposedly came with a 70/30 rightie edge, but I didn't notice anything weird with it when I got it. On the other hand, I sharpen it 50/50, so whatever asymmetry it has will be temporary- a situation that won't apply to the bread knife...
