I'm been an occasional lurker on CT and have finally decided to join up. I'm one of those stubborn types that worked their way up from the dish pit and prep kitchen, onto the hot line, and finally am at the helm of my own kitchen. It's been a wild ride thus far, and each week I find things that I would love to run by a veteran in the industry to gain some insight, see if there's an easier way to do xyz, etc. so I'm glad CT exists!
