I have been using some muffin mixes for lg batch baking and haven't had good results with a  "multigrain" type.

There is whole wheat and rice flour in the mix and the product makes a very heavy, slightly bitter taste and has holes throughout the crumb.

It is a well known national brand as well. Any suggestions on how I can fluff up the batter? I'm stuck with a whole case!
