trying to get more information on the use of methyl cellulose types. I have some SGA 16M and want to make some hot ice cream..my last attempt used A4M and although it worked the texture was somewhat rubbery and when it cooled it held its form when I wanted it to melt...what did I do wrong? I want to use this for a desert and am trying to work out whether I can hold the Hot Ice Cream spheres in a liquid at say 50 degrees celsius or will that ruin the texture etc
