I have heard all about the Shun knives. I own a B & B / Retreat and I am the chef. This is my FIRST Shun !!!! I ordered the 8" onion knife. I do hope that I will love it.......

Shun
I was given a shun yanagiba and was very displeased when I opened the box and examined knife.
I'm not sure why, but they added 2 more bevels to the knife which took months to fix.
Yanagi are single bevel, not 3 haha.
Anyways, it's a decent knife that will last. Balance is good, not great.
Shun is more about looks I'd say.

Is there a question you're trying to ask?
For what it's worth, your knife is not much like Bearded Crow's and most comparisons including "balance" and bevel angles are invalid.

Congratulations! I assume you posted this as a statement in which we should be expressing glee and support for you... which I do. I like Shun products but mostly the "traditional" shapes. I look forward to hearing how you like the Onion knife after you use it a while.
Be advised: many folks onthis forum don't like Shun and will let you know that. I find it interesting because there are plenty of chefs who use Shun and seem to like them. But maybe they are cooking more than they are typing... so we only see them cutting with Shun but never get to hear how much they hate them. (insert sarcastic smilie here) To each, his/her own!
