I'd say first to get trained on restricted diet types. 5 years ago, when I started our chef service, people with dietary restrictions made up 10% of our business. Now they are over 50%. Food allergies are being over-diagnosed and people turn to every fad diet you can think of. The good thing is that there is a cookbook for everything.
I hope you have luck with Craigslist. In our areas of operation, Craigslist doesn't produce anything. 90% of our business comes from our website. The rest is referrals and social media marketing.
There is a young lady on this site named Petals, maybe she can help you as she is doing this and she knows her onions. Good Luck
