I want to make a cherry flavored filling using essence/extract. I normally make a simple syrup, add some butter, a little white chocolate and a dash of essence. When I mix it all together, it turns out grainy, like chewing sand.
I need help with the ratios and/or recipe amounts to do this. Either I am putting too much of something or not enough of something else, or mixing it incorrectly. But I know that that there is a recipe with these ingredients.
I ultimately have to make a 4 different kinds, so I'm thinking of perfecting a base for the recipe and just changing the essence flavor for each flavor.
