Salmon Cakes

This was pretty good:

1# fresh salmon - chopped into small cubes

1/2 a loaf of bread - dried in the oven and broken up

3 oz of smoked gouda -shredded

3 Tbsp of Soy Sauce

2 tsp of chilli paste

stock as needed

 

Sorry, I have no picture, but I ate it all.

 

Mix all the ingredient except the stock. Let it hang out a bit on the counter (swatting the critters away). Then add the stock until it all stick together to make patties. Heat an iron skillet with a little sesame oil to about medium and give them a little brown on each side.

I like making seafood cakes and salmon works very well.

Yours sound wonderful

It sounds very nice but everyone has their own versions of making salmon and seafood fish cakes. I make a Thai version including fresh coriander, salmon flakes or seafood mix, lime zest and juice, sea salt and ground black pepper, cumin powder, spring onions, olive oil, sesame oil, sweet chilli sauce, breadcrumbs, flour and beaten egg. This is all put into the food processor except thebreadcrumbs, flour and beaten eggs. Once grinder together, flour your hands well and pick up a small handful of the mixture, form into patties and coat it with flour, then egg and breadcrumbs thoroughly.

Place in a medium hot frying pan or griddle with enough olive oil to cover the bottom of pan. Fry on both sides until brown and cooked. Serve with sweet chilli sauce or sweet soy sauce, or mayonnaise.
