I know good chefs get a nice blade by sharpening it. I have never been able to get the hang of it. Those little roller gadgets do not seem to work for me either. What knife brand would you recommend for a basic chef.... I cook a lot of vegetables plus poultry and meats and am doing more and more deboning. It is terribly hard to find professional knife sharpeners... but I know of one
