well the chef that I follow (pastry) is deciding to leave the commercial world and step into a more relax retire life
hes from Hong Kong and - not so great at english (so im helping him ask this question)
is anyone from New Zealand/ australia region?
cuz my chef wants to open a bakery - deli shop only for breakfast and/or lunch
his idea is just to make freshly baked pastries.. crossaints .. breads etc and sandwich em for sale
suggestions? possible or not? price to open shop? how many people etc
(he never opened his own shop.. all he has is 30~40 years of hotel experience)
