Hi folks...lowcalval here..I work at a high end Italian rest. on St John Usvi as their main handmade pasta maker..and I mean by hand !..Got a question about how to quick dry fresh pasta..I'm playing around with recipes as well as using a convection oven on cool setting to speed things up....any thought, suggestions...Thanks !

Hey lowcalval, welcome to the site. I used to live on Tortola in the BVI just across the water. Can't help you with drying the pasta as I have never done that with fresh, but mainly just wanted to say hail up.
