I'm currently operating a small burger joint with a friend. None of us are chefs, rather, i guess neither of us had cooked anything more than an egg (till about a few years back!), so i would really appreciate if you guys can help me out here.
So, one of our prime ingredients in the seasoning mix is, freshly ground black pepper. So after the patty is shaped we'd sprinkle on some fresh pepper through a pepper mill (those manual ones).
But now, since we're doing it on a larger scale it's not feasible anymore. We tried using a normal pepper grinder (the kind that comes as an attachment on blenders) but that either does the pepper too fine, or makes it a mix of fine and coarse ground pepper. We need consistency.
So, we basically need something to grind about 200-300 grams of black pepper daily. I've been searching on these forums, and it seems like, our needs would be fulfilled by a coffee grinder which has settings for coarse and fine grinds? Is there any specific equipment that i should try?
