Myself, I’ve never been to, nor seen a butcher, even at my age.
In Kaneohe there were none.
I would imagine because most things are shipped in from the ‘mainland’.
What little meat that is grown there is for that household and they would butcher as well as consume it themselves. Where we lived when I was small, the neighbors had chicken, geese and pigs, no cows though.
I would venture to guess that if I were to go into a butcher’s shop and purchase a large-ish piece of meat and have them trim/debone it , I would ask the butcher for whatever was trimmed away as I would have paid for that, right?
When I go to the market for our meats, the choices of cuts that have the most trimming/deboning are more expensive than the one that has not.
