At the butcher...

Just wondering, do all butchers weigh the meat first before trimming or removing bone?

I always thought that you paid for what you purchased. If you receive the bone and trimmings after the butcher is finished then you would pay for it. Otherwise I don't think you would be charged for it.

 

It is a good question I honestly never really took much notice since I never ask the butcher to trim or debone anything.

There is an old story about the lady who grabbed the butcher's thumb as she left the counter to go pay for her purchase. He said, "WHAT ARE YOU DOING?" She said, "you weighed the meat with your thumb on the scale, I'm buying it too!

On retail level yes.At the butcher shop

 

On wholesale level  2 ways  either as is or as it falls  or oven ready  both have different prices, as is being cheaper.  I buy as is as I would prefer to do my own cutting.

 

Supermarket  sells both ways. and they will rob you. Example you buy a whole strip loin. And they tell you they will cut it into steaks no charge. They weigh it ,then they trim it then  cut it into steaks. Lets say the weight was 20  pounds they cut lets say 11 steaks net,  they steal one and replace its wight with fat and trim  now you still have your 20 lbs but with one less steak. They package that steak and sell it therefore making an even  larger profit. 

   This has been done for years in this business..  I always remember one thing.

If you pay for bone in untrimmed price then yes they will weigh it before. If you pay for trimmed and deboned that is a higher price to begin with and that should be weighed after trimming.

So it is unclear then.  I don't buy much meat from supermarkets, I usually get it at the local butcher.  There are many butchers in my greek little neighborhood and they all do this.  I bought a whole pork butt yesterday and I asked the butcher to take out the bone.  He weighed it, and then deboned it.  The one bone this has is a shoulder blade, it could weigh up to a pound.  What I should've done is asked to keep the bone as well after he deboned it.

Myself, I’ve never been to, nor seen a butcher, even at my age.

In Kaneohe there were none. 

I would imagine because most things are shipped in from the ‘mainland’. 

What little meat that is grown there is for that household and they would butcher as well as consume it themselves.  Where we lived when I was small, the neighbors had chicken, geese and pigs, no cows though.

 

I would venture to guess that if I were to go into a butcher’s shop and purchase a large-ish piece of meat and have them trim/debone it , I would ask the butcher for whatever  was trimmed away as I would have paid for that, right?

When I go to the market for our meats, the choices of cuts that have the most trimming/deboning are more expensive than the one that has not.

This will solve it and make for a much tastier meal.

 

I debone it - season the meat fairly heavily - then put the bone back in and tie it all up again.

 

Presents and carves wonderfully at the table and there is always a fight over who gets the bone!

 

Not sure if your butcher will do this but you can always untie it and redo it with the bone in.

He should  include the bone with your purchase., as you purchased the whole shoulder. Now he sells the bone to someone else. Thats how they afford Mercedes cars as the above  post says.

You're probably right! 

 

What I hate about the butchers around here is that they automatically start to trim and cut up meat even if you don't ask them to.  I bought a nice prime rib a few weeks ago and the guy started trimming the fat off it!  I had to stop him mid cut.  I hate it when they trim fat off my meat and prefer to do it myself it at all.

 

I never allow my husband to go meat shopping.  One time when I sent him to buy lamb chops he came back with them completely deboned.  I almost had a heart attack.  He didn't even notice that he the butcher deboned several pounds of lamb chops (enough for a party of 10!) right in front of his face.  All the people at my table were Greek and let me tell you, serving them lamb without a bone on it is like serving serving wonton soup without any wontons in it.
