Searing Orange Roughy ?

Does anyone have a good way to get good color on orange roughy ? Maybe a certain type of pan ? Using a screaming hot pan and oil I have to baby it to get any color and most of the time it shrinks way too much. Butter just gives it that brownish color.

Coat it with flour, then pan fry.
