butternut squash polenta and short ribs

Preparing a special for the italian restaurant i'm filling in at. The chef procured these ingredients for me. I wanted to do a not so traditional short rib but i think pairing it with the squash limits my options and creativity. Any insights would be appreciated.

Well it's short ribs so you probably have to do braise it.  That already limits your options.  Maybe chef wanted you to do exactly that.  Braised short rib with butternut squash polenta.  :D

 

Sounds darn good anyway.

The other day I braised some short ribs in a nice stout, used fennel bulb instead of onion and added some dried tart cherries.  It ended up quite nice.
