Cake Question-A problem with Vanilla cake

So I've made vanilla cake a million times, tons of different ways. When I make cupcakes they're always light in color and vanilla looking but, everytime I pan the same batters into a cake pan, the inside gets very dark in color almost like a spice or cinnamon cake. At first I thought it was the recipes I was using, then the oven. I've since used different ovens, different pans, different recipes but, I'm clueless. If anyone knows what would be causing this I'd greatly appreciate the help =).

 

And no, I'm not burning the cakes haha. The outside is fine, the inside looks like a cinnamon spice cake though =( and would be fine if it was a spice cake..but it's vanilla and I'd like it to look like vanilla. Thanks in advance!

You need to post the recipe before anyone can start guessing what might be the cause of your problen.
